Shaanxi Qishan noodles have always been well-known in China and abroad. It is a branch of Shanxi pasta. During the Daoguang period of the Qing Dynasty, the Ma Jinding brothers in Daishan County, Shanxi Province, went to Qishan to do the noodle business. The name was "Shuntiancheng". Until today, the Qishan noodles still use this old name. The royal tribute of the past is now famous overseas.
In the 13th century, the famous Italian traveler Marco Polo came to Shanxi twice to bring pasta to Italy along the "Silk Road". Later, the Italians also liked the noodles, and the types of noodles were developed to more than 400 kinds, mostly hollow noodles, thick as pointed, thin as silk. The Italian "Macaroni", which is popular in the world, has been created in this context.
The introduction of noodles has transformed the nomadic culture into a new field for the flour--the bread, as the Westerners have said, adding more ways to eat and solving the problem of flour storage.
